Three amigos, each with a unique path but a shared vision, embarked on a journey to create a space where friends, family, and loved ones could gather around great food and even greater company. Carmen from Guanajuato, Gonzalo from Guadalajara, and Jesse from Nelson, BC, envisioned a haven that felt like home, where every meal was a celebration woven into the fabric of the community.
The Dream and Evolution
The dream was simple yet profound: to cultivate a dining experience that mirrored the warmth of a Mexican home, powered by fresh ingredients, traditional recipes, and the dedication of a team passionate about bringing this vision to life. Zapoteca in White Rock was the first manifestation of this dream, a humble beginning that promised so much more. Despite the departure of Carmen after the first year, the foundation they built together remained strong, a testament to the enduring spirit of their mission.
The Growth
Under the stewardship of Gonzalo and Jesse, Zapoteca flourished beyond their wildest dreams. What began as a small restaurant quickly became a cornerstone of social gatherings, known for its vibrant atmosphere and authentic cuisine. The journey from hosting just five tables on opening night to becoming a beloved landmark speaks volumes about the community’s embrace and the universal appeal of genuine hospitality.
The Expansion
Today, the dream of the original trio lives on through Gonzalo and Jesse, who have seen their vision grow from a single location to an expanding family of restaurants. The recent opening in Kitsilano marks the beginning of a new chapter in the Zapoteca story, one that honors its roots while reaching for new horizons.
